Seared Salmon With Roasted Cauliflower

Need a healthy, low-calorie dinner that works any time of year? Try this buttery salmon, which pairs perfectly with the crunch of fresh cauliflower.

Ingreadient

Cauliflower
  • 1 large head cauliflower
  • 2 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
Salmon
  • 4 six-oz. pieces salmon
  • 2 tsp. olive oil
  • 2 cloves garlic, chopped 
  • 1 Tbsp. capers
  • 1/2 c. parsley leaves

Direction

    1. Toss cauliflower florets with olive oil, salt, and pepper.
    2. Roast at 450°F until tender, then broil until golden brown.
    3. Season and cook salmon in oil in a large skillet on medium-high, until opaque throughout, adding garlic and capers to the skillet after flipping salmon once.
    4. Toss cauliflower with capers, garlic, and parsley leaves; serve with salmon.
