Parmesan Chicken & Roasted Tomato Sandwiches

Bright tomatoes and crunchy arugula set this Parmesan chicken sandwich apart from the competition—and the fact that it's only 375 calories doesn't hurt, either.

Ingreadient

  • 6 small, thin chicken cutlets
  • 3 Tbsp. olive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 Tbsp. grated Parmesan cheese
  • 1 pt. grape tomatoes
  • 2 c. arugula
  • 1 baguette

Direction

    1. Brush tops of chicken cutlets with two teaspoons of olive oil. Season with garlic powder, salt, and pepper, and sprinkle each with two teaspoons of grated Parmesan.
    2. Place cutlets on one side of a foil-lined broiler-proof pan. Place tomatoes on the other side and drizzle with one tablespoon of olive oil. Roast at 450°F for six minutes, then broil until golden brown and cooked through, about two minutes.
    3. Smash tomatoes on the bottom of a split baguette, then top with chicken cutlets and arugula.
