Large portobellos are meaty and filling. For the broiler, all they need is a marinade of garlic, olive oil, vegetable broth, and balsamic vinegar. Most of your time will be spent waiting for them to marinate. After that, it takes just a few minutes on each side to grill them to perfection. This same recipe can be used on your outdoor grill if you feel like cooking out.
Ingreadient
- 4 large portobello mushrooms, wiped clean and stemmed
- 1 tablespoon olive oil
- 1 tablespoon vegetable or chicken broth
- 1/4 cup balsamic vinegar
- 2 cloves garlic, crushed
Direction
- Gather the ingredients.
- Place mushrooms in a large bowl.
- In a small bowl, whisk together olive oil, vinegar, broth, and garlic. Pour over portobello mushrooms, cover bowl, and marinate for 15 to 30 minutes.
- Preheat broiler.
- Place mushrooms on a broiler pan coated with nonstick cooking spray. Broil 6 inches from broiler for 5 to 7 minutes on each side.
