Cheat’s fish pie

Fish pie is one of the ultimate comfort foods but can take a bit of time to make. If there's only you, try our cheat's version that's ready in just 20 minutes - perfect for a midweek pick-me-up.

Ingreadient

  • 4 tbsp half-fat crème fraîche
  • 1 tsp Dijon mustard
  • 100g spinach, chopped
  • 50g frozen peas, defrosted
  • 1 large fillet smoked mackerel, torn into chunks
  • 150g mashed potato
  • butter

Direction

    1. Heat the oven to 200C/fan 180C/gas 6. Put the crème fraîche and mustard in a pan and heat gently. Add the spinach, and stir until it wilts, then stir in the peas and mackerel. Tip into a heatproof dish and top with the mash. Rough up the surface, then dot with butter and bake for 10 minutes until golden and bubbling. Slide under a medium grill for a few minutes extra to get a crispier golden top.
