This tomato stew is the best vegetarian main when you want something fast and healthy to serve with rice. Ready quickly in 30 minutes, serve it with a big bowl of basmati rice
Ingreadient
- 200g ripe cherry tomatoes or small tomatoes, half of them halved
- olive oil
- 1 clove garlic, crushed
- a good pinch smoked paprika
- a pinch sugar
- a large handful of leaves basil
- 1 tbsp Greek yoghurt
- cooked to serve basmati rice
Direction
- Put the tomatoes in a small pan and add a good slug of olive oil. Add the garlic, paprika and sugar and heat slowly. Cook until the tomatoes begin to pop, then add the basil, stir once and season. Add the yoghurt to the top of the stew and serve with the rice.
