This quick and easy falafel mezze bowl is packed with flavour and makes a great vegetarian midweek meal for two
Ingreadient
- olive oil
- ½ lemon, juiced
- 50g young spinach
- 4 tbsp hummus
- from a jar 2 roasted red peppers, sliced
- 1 tbsp pumpkin seeds, toasted
- to serve warm pittas
- to serve chilli sauce
- 200g falafel
Direction
- Heat the falafels in the oven, following packet instructions. Whisk 1 tbsp oil with 2 tbsp of lemon juice and season.
- Dress the spinach and divide between 2 large bowls. Add the falafel, hummus and peppers in separate piles.
- Scatter over the pumpkin seeds and serve with pittas and chilli sauce.
